Our Favorite Recipes

Creamy Broccoli Soup!

We love soup anytime of year!  We typically avoid “creamy soups” because they are usually high in saturated fat – the fat that’s not good for your heart, but NOT this soup.  This broccoli soup is creamy and delicious and in just one cup it is a good source of vitamins A and C, and calcium and iron – WOW!  Make extra of this soup because it goes quickly. Click here for the recipe!

Supermarket Spy Kids Report

Vita Coco 100% Pure Coconut Water

It's going to be seriously hot this summer, so we need to be smart about what we drink to stay hydrated naturally.  While water is the best choice, sometimes we want some more flavor and an extra nutritional boost!  The beverage aisle was a real challenge, we spied on the ingredients in Gatorade and realized it was not a good choice because of the high sugar load and food dyes -- bummer.  Instead, we found and are crazy about Vita Coco coconut water.  It has a great flavor (even better chilled!), it's high in electrolytes and potassium; and the only ingredient is coconut water. Sip up this summer, and check out their Web site for more information.

What's New at the Barn:

1

EAT LOCAL!  It's the season for farmers' markets!  Don't miss out on all the "good stuff" this summer season.  When you buy fresh locally, you support local farmers and reduce your carbon footprint -- how cool is that?  Our young farmers are eating and cooking fresh from the HealthBarn USA garden every week with yummy asparagus, spinach, kale, salad greens, Egyptian onions and a ton of herbs!  We just harvested fragrant chamomile flowers to dry so we can make herbal tea to help us sleep better!  Not sure what's locally available in your state, click here and use this great Web site to find out.

Be adventurous and join a local CSA.  What is a CSA?  According to the USDA, Community Supported Agriculture consists of a community of individuals who pledge support to a farm operation so that the farmland becomes, either legally or spiritually, the community's farm, with the growers and consumers providing mutual support and sharing the risks and benefits of food production.  A CSA season typically runs from late spring through early fall. The number of CSAs in the United States was estimated at 50 in 1990, and has since grown to over 1000. To learn more about a CSA in your state or nearby town, click here for more information.

If you are not ready for the CSA endeavor this year, shop the local farmers' markets bursting with fresh produce, herbs, homemade baked goods and much more!  Click here to locate a farmers' market nearby.  If you are in New Jersey, check out Abma's Farm Market where the family sells a variety of fresh produce and strawberries; and if you are in Westchester, the Hilltop Hanover Farm's u-pick and farm stand are open and selling out of beautiful organic produce.

Transportation is available for children coming from New York City.

Go Summer Seedlings: The Seedlings, ages 3-5 have an action-filled summer ahead that includes planting and eating organic fruits and vegetables, helping to cook healthy recipes and doing all natural arts & crafts.  The New York Times featured HealthBarn USA in "No Yucks Allowed."
